They have been a great addition to my workouts!

Speaking of workouts;
this week has been filled with great ones.

I’ve been following a 3 days on;1 day off routine.

Day 1: Chest/Shoulders/Triceps
Day 2: LEGS/Core
Day 3: Back & Biceps
Day 4: Rest or Cardio/Core

I really like grouping muscle groups now!
I used to focus on one area a day,
but now I switched it up to keep my body guessing!

Chia Jam Filled Blueberry Lemon PowerSquares
& a yam loaded with Vega protein fluff & cinnamon!
(Vega protein mixed with coconut milk until desired consistency!)

Did someone say

YES! I took my original Chia Jam Filled PowerMuffins
& turned them into bars, thanks to Gina for the idea!

I added fresh squeezed lemon juice from one lemon & the zest
into the coconut flour batter;

Lemon Vanilla Version:
3/4 Cup Coconut Flour
1/4 cup of Protein Powder
(I used VEGA)
1 tsp Baking Soda
Zest from 1 lemon
Juice of 1 lemon

1/2 Cup Unsweet Applesauce
1 Cup Unsweet Almond/Coconut Milk blend
(any milk of choice)
3 Egg Whites
2 Whole Eggs
2 tsp Pure Vanilla Extract
20ish Drops of Liquid Stevia
(you can add 1/2 cup dry sweetener
or 3 TB of sweetener of choice or a mashed banana)

then instead of strawberry chia jam; I made blueberry!

Instead of putting it in the microwave,
I heated 1.5 cups of frozen blueberries with 1/4 cup water
on a medium heat stove until bubbly
& then added the chia seeds before letting it gel in the fridge!

Then I layered them up!
1/2 of the Lemon Batter on the bottom;
layer of chia jam;
final layer of batter with
a sprinkling of
CHIA SEEDS! DUH! Winking smile

Baked for about 45-50 minutes at 350 Degrees.

They were so yummy &
a PERFECT pre-workout snack!!
